Busolai / bucolaj / buzolai (rings)
This is a pastry baked in the form of cookies, which were served on special occasions like confirmations, weddings and other holidays. The name originates from the Trieste word “buso” (Italian: buco), meaning hole. The pastry is round and has a hole in the centre.
There are many recipes for baking “busolai” cookies, differing only in some ingredients.
